Oats are very nutritious in that they provide an excellent source of dietary fiber to the diet, more than any other grain. They are also known to reduce serum cholesterol in the body, to be higher in protein and lower in carbohydrates than other grains. Oat flour is a great addition to your baked goods to increase the nutrition as well as to impart a unique flavor. With its light and sweet flavor, oat flour works best when it is added to wheat flour (replace up to 20% of wheat flour with oat flour) to make pancakes, waffles, pie crusts, muffins, biscuits and bread. Another characteristic of oat flour is that it is gluten free making it suitable for baking for individuals with gluten intolerance disorders. Since it is gluten-free and if used as the single flour in your recipe, it will not produce baked goods that rise well. Due to this, it is recommended to add more yeast and or baking powder to your recipe. It is known to be more moist than wheat flour which makes it wonderful for making cookies and quick breads.
