Also known as goat peas, black-eyed peas are an ivory colored bean with a prominent black spot in the middle. Thought to be originally from West Africa, they are now grown in many Asian countries as well as countless heirloom varieties grown in the Southern U.S.
Black-eyed peas contain calcium, folate, protein, fiber, and vitamin A among other nutrients. They are a popular ingredient in the southern U.S. used to make soul food and other southern cuisines. They are also used in a wide variety of other cuisines throughout the world including Middle Eastern, Egyptian, African, and Asian.
