Although commonly referred to as an ancient grain, buckwheat is technically a seed, not a grain, and therefore is gluten free. The flour is milled from whole buckwheat seed and/or from buckwheat groats. With a hearty, bold, nut-like flavor and creamy color with little black specks, this flour is highly nutritious. It is known to be high in fiber as well as a good source of protein and calcium. It can be added to almost any recipe that calls for flour anywhere between 25% to 100%, depending upon the recipe. For wheat breads, it is recommended to use up to 50% in a recipe. It provides a moist and tender texture to bread and baked goods when used in smaller amounts. Tends to make the texture more crumbly when used in larger quantities. Works especially well when used to make pancakes, flatbreads and crackers.

Product shelf life is dependent on shelf life and is highly variable. This product should be stored in cool, dry conditions and a humidity controlled environment. The industry standard for shelf life is 12 months from date of manufacturer when stored under recommended conditions.
