Although commonly referred to as an ancient grain, buckwheat is technically a seed, not a grain, and therefore is gluten free. Even though they are a seed, buckwheat groats still contain the germ, bran and endosperm making them very nutritious.
Buckwheat groats are a rich source of protein, dietary fiber, B vitamins (B2, B3, B5, B6), and minerals including niacin, magnesium, manganese, and phosphorous. When cooked, they make for a robust and hearty breakfast cereal. They are also wonderful used in place of rice to make salads, soups, and pilafs.
