Barry Callebaut Extra Brute Cocoa Powder is a premium, high-quality Belgian cocoa powder that is alkali processed for a uniquely balanced color, taste, and consistency. This dutching process it goes through neutralizes the acidic nature of chocolate. The "extra brute" means that is is very dark so it has a rich, deep chocolate flavor and is deep dark red in color. It works well in recipes that call for dark chocolate such as brownies, cookies and some cakes. It has a 22-24% fat content (cacao butter).

It is recommended to store this product in a clean, dry (relative humidity max. 70%) and odorless environment. The recommended storage temperature is 12 - 20° C/54 - 68° F. The shelf life is 24 months from the date of manufacture when stored under recommended conditions.
