Coconut flour is very popular in gluten free, grain free and low carb cooking. Made from finely ground dried coconut meat, it has a high fiber content with a lower glycemic index compared to traditional wheat flour. Having a slightly sweet coconut flavor and a creamy white to light brown color, it can be used in both savory cooking or in sweet baked goods. It makes for a wonderful coating on chicken and fish. If using it in baking, it is not recommended to use as a one to one substitute for traditional wheat flour, but to replace up to 1/3rd of the wheat flour called for in a recipe. Because of its high fiber content, it tends to soak up moisture. Given this, it is also recommended to add an equal ratio of moisture.

The shelf life of this product is dependent on storage conditions and is highly variable. It should be stored under cool, dry conditions and in a humidity controlled environment. Industry standard for the shelf life of this product, when stored under optimum conditions, is 12 months from the date of manufacture.
