Fennel seed can be used either whole or ground into a powder in both sweet and savory dishes. Fennel is a key ingredient in five-spice powder and a standard ingredient for dry rub blends. Fennel is also a common ingredient in loose leaf tea blends, like chai.
Fennel adds a subtle fragrant sweetness in Italian sausage, marinara sauce, homemade bread, and cookies.
Fennel seed is the fruit of Foeniculum vulgare, a flowering perennial herb that is a species in the carrot family. It is a native plant to the Mediterranean, but is now grown and used in cuisines all over the world. Fennel seed has an oval shape and once dried takes on a greenish-brown color, which slowly fades to gray as the seeds age. Highly aromatic and flavorful, it is similar in taste to anise which has a licorice type flavor.
