Dried, cut, and sifted Rosemary leaves are highly aromatic. They add a delicious tea-like, slightly camphoraceous aroma and flavor to roasts, sauces, and rubs. Try it on pork, chicken, lamb, potato, or egg dishes. Rosemary is an evergreen shrub that is relatively hardy. There are a number of varieties and all can be used in cooking, but the culinary variety is known for its tender upright shoots and sweet flavor.
