Natural brown sugar is produced from the late stages of cane sugar refining. Its distinctive brown color comes from the presence of molasses which is the residual solution left after the crystallization process. The darker the brown sugar and the stronger the taste, the more molasses it contains. On average, dark brown sugar contains approximately 6.5% molasses by weight. Molasses is hygroscopic in nature making brown sugar very soft and moist. Wholesome Sweeteners Organic Dark Brown Sugar in particular is of the highest quality because the sugar cane it is produced from is grown in adherence to strict organic standards. The cane is cut green, never burned and are not treated with herbicides or synthetic fertilizers. Also no chemicals, bone char or animal by-products are used to make or de-colorize this sugar making it ideal to use in vegan cooking. Natural dark brown sugar can be used as a one-to-one substitute for refined brown sugar in any recipes. With its its dark caramel color and rich molasses flavor, it works wonderfully for making cookies, cakes, sauces and glazes.
