Also known as red beans, kidney beans is a common bean variety, Phaseolus vulgaris. They were given their name for their shape which is similar to a kidney. With a mild flavor and soft, creamy texture kidney beans easily absorb the flavor of other ingredients used in a recipe. It is for this reason that they are commonly used to make chili con carne and minestrone soup. They are a staple in southern cooking. As a matter of fact, the Creole dish red beans and rice is a Monday meal consumed in Louisiana for generations.
Kidney beans are packed with nutrition. They are a good source of both dietary fiber and protein. They are a rich source of the trace mineral, molybdenum which is known to help detoxify sulfites, a common preservative added to prepared foods. They also contain significant amounts of the minerals folate, iron, magnesium and manganese as well as the vitamin thiamin (Vitamin B1).

Suggested Storage: The product shelf life of red kidney beans is dependent on storage conditions and is highly variable. They should be stored under cool, dry conditions in a humidity controlled environment. The industry standard for shelf life, when stored under optimum conditions, is 24 months from the date of manufacture.
