Also known as unblanched almond flour, this almond meal is made from ground, dry roasted premium California almonds. Because unblanched almonds still have their skin, the meal will have specks of brown. With a texture similar to cornmeal, almond meal works wonderfully as a gluten-free alternative to wheat flour in baking and cooking. Additionally, with a high protein content and low carbohydrates, it is especially popular in vegan and paleo dishes. For baking, it is not recommended to use almond meal all on its own but to blend it with another type of flour (wheat or gluten-free). Since almonds are high in polyunsaturated fats, the meal will add moisture to your recipe. This is important to remember as it will affect the final outcome of your baked goods. For yeast dough, it is recommended to add 1/3 cup of almond meal per cup of wheat flour. For non-yeast doughs, it is recommended to substitute 1/4 cup (25%) of the flour in a recipe. With a rich, nutty flavor almond meal is a great ingredient to use when making cakes, cookies, muffins, bread, and nutrition bars. It is commonly used to make macaroons, almond paste, and marzipan. It also makes for an excellent breading for fish, pork, poultry, and veggies.

The product shelf life is dependent on storage conditions and is highly variable. Almond meal should be stored under cool, dry conditions and in a humidity controlled environment. Refrigeration is recommended. The industry standard for shelf life, when stored under optimum conditions, is 14 months from the date of manufacture. Under ambient conditions, the product should be used within 3 months.
