Refined white sugar goes through a series of crystallization processes to remove all the molasses making it more white in color with a sweet taste. Evaporated cane sugar, on the other hand, is a "first crystallization sugar" meaning that the cane is harvested, the juice is extracted, impurities are removed, the juice is crystallized once and then the end product is bagged all within 24 hours of harvest. Being that evaporated cane sugar is less refined, it still contains a small amount of molasses making it higher in vitamins in minerals. It is golden in color with a very slight molasses sweet flavor. The sugar cane used to make this sugar is grown, harvested and processed in South America using strict organic standards without using any chemicals or additives It can be used as a one to one substitute for refined white sugar in any recipe.

Storage Recommendations
Product shelf life is dependent on storage conditions and is highly variable. Products should be stored under ambient conditions in a humidity controlled environment. Product can tend to get hard during extended storage and cold temperatures. Simply rolling the bag should restore the free-flowing characteristic. Industry standard for shelf life, when stored under optimum conditions, is 48 months from the date of manufacture.
