Also known as chickpea flour or cici bean flour, garbanzo bean flour is very popular in Middle Eastern and Indian cooking in dishes such as falafel, hummus, socca and farinata. It is made from freshly milled stone ground garbanzo beans and is high in protein, dietary fiber and a good source of iron. Also very popular in gluten free cooking, it can be used to make crackers, pizza crusts and bread as well as a thickener for soups, sauces and gravies. If you are wanting to increase the protein and fiber content of your baked goods, it is recommended to replace traditional wheat flour with up to 25% of garbanzo bean flour which will also impart a sweet, rich flavor.
