Hard red winter wheat has the highest protein content of all the varieties of wheat. With a robust, hearty flavor and wonderful chewy texture, they are great cooked and eaten as cereal or in place of rice or other grains in soups, salads, and casseroles.
A 1/4 cup serving of hard red winter wheat berries contains 6 grams of dietary fiber and 7 grams of protein. Hard red winter wheat is also a good source of iron, calcium and potassium.
