Produced from whole dark northern spring wheat, Central Milling's Organic Hi-Pro Whole Wheat flour is milled on a short flow roller mill making it so that the bran and the germ of the wheat berry is not separated during the milling process. Short flow roller mills produce much less heat and are much more gentle on the wheat berry during the milling process. This coarse grind whole wheat flour can be used to by itself to make rustic whole wheat artisan and pan breads, but it works best when blended with softer flours as a percentage of the total flour weight of your recipe.

Product shelf life is dependent upon storage conditions and is highly variable. Product should be stored under cool, dry, dark conditions in a humidity controlled environment. Industry standard for product shelf life, when stored under optimal conditions, is 6 months to 1 year from date of manufacture.
