This wheat is milled on a modern organic flour mill utilizing the entire organic whole grain. In particular, their highly efficient one-pass mill naturally processes the bran, germ, and other beneficial elements of the wheat to make a flour with more macronutrients, protein, and vitamins compared to flour milled from traditional mills. This dry milling process also produces a flour with a lower moisture content (10% or less) compared to flour produced from mills that use water. Flours with lower moisture content are known to have longer and more consistent storage stability, better retention of nutrients and protein, and little or no deterioration of baking quality. In addition, the lower moisture content means you get 4% to 6% more volume of flour for the same price.
Cascade Organic Farms is a family-owned grower and producer of organic wheat and flour grown in Washington State. They have several thousand acres of certified organic irrigated farmland near the east slopes of the Cascade Mountains. All of their crops are grown with Columbia River water fed by mountain glaciers using modern irrigation systems that deliver the most efficient amount of water. Additionally, the rich volcanic soil and perfect climate conditions along the east side of the Cascade Mountains provide the optimum mix of essential nutrients and an excellent natural environment for growing some of the highest quality wheat in the world.
All of their crops are grown without the use of pesticides, synthetic fertilizers or genetically modified organisms. To help control pests and diseases, they use an integrated pest management (IPM) system. In particular, they monitor crops for pests and identify them accurately. They also plant rotational crops that naturally repel harmful pests and use natural predators to reduce pest populations. They use state-of-the-art global positioning satellite tractors to decrease fuel consumption and to reduce carbon and greenhouse gas emissions.
The flour is made up of much smaller particles and has similar functional, convenient, and easy-baking qualities as white refined flour while retaining all of the natural beneficial nutrients of whole grain flour. With a high protein and gluten content, this flour is ideal for making bread and other baked goods.

It is recommended to store this flour in clean, dry conditions of 50-70 degrees F and less than or equal to 60% humidity. When stored following these recommendations, the maximum shelf-life is 240 days from the date of manufacture.
