Specific varieties of red hard winter wheat are chosen to make this wonderful pizza flour. They are chosen for their gluten structure in that it needs to be both soft and strong. The flour also needs to be able to stand up to a long, cool fermentation process needed to make thin crust pizza dough. Upon using this flour, your end product will have a resilient crumb that melts in your mouth. It works best for Neapolitan style pizzas and flat breads.

Product shelf life is dependent upon storage conditions and is highly variable. Product should be stored under cool, dry, dark conditions in a humidity controlled environment. Industry standard for product shelf life, when stored under optimal conditions, is 6 month to 1 year from date of manufacture.
