Made from stone ground whole grain quinoa, this flour has become very popular in gluten free and vegan cooking. Quinoa originated in the Andean region of Peru, Bolivia, Ecuador, Colombia and Chile and was domesticated by the Andean people 3,000 to 4,000 years ago. It has been and continues to be a very important staple food for the Andean cultures. As a matter of fact, the Incas believed the crop to be sacred and referred to it as the "mother of all grains." Not only is it easy to digest, but it is also highly nutritious. It is considered a complete protein, providing all of the essential amino acids. It is also a good source of dietary fiber, multiple B vitamins and several minerals such as manganese and phosphorus. If using to make cakes and cookies, it can be substituted one to one for all-purpose flour. In other baked goods such as bread, biscuits and rolls, it is recommended to substitute up to 1/2 of the all-purpose flour called for in the recipe imparting a nutty, earthy flavor.

The shelf life of this product is dependent on storage conditions and is highly variable. It should be stored under cool, dry conditions and in a humidity controlled environment. Industry standard for the shelf life of this product, when stored under optimum conditions, is 12 months from the date of manufacture.
