Also commonly known as "pignoli", pinenuts are the edible seeds produced by pine trees. Although all species of pine trees produce seeds, there are only approximately 20 species that produce seed large enough for human consumption.
Our medium raw grade A pinenuts are produced from the Mediterranean Stone Pine tree (Pinus pinea) which is commonly grown in Asia. Asian pinenuts, the most common on the market, are typically short and more plump compared to other varieties of pine nuts.
Pinenuts, in general, are high in protein and dietary fiber. They are a rich source of the vitamins E & K as well as the minerals copper, magnesium, manganese, phosphorous and zine. They are also a good source of thiamine, niacin and iron. Composition of the fat is 34% polyunsaturated fat and 18% monounsaturated fat on average.
With their slightly sweet, buttery flavor and smooth texture, pinenuts are commonly used as an ingredient in Middle East and Italian cuisines. Sweet and savory foods such as baklava, pesto and pignoli cookies often include pinenuts.

Product shelf life is dependent on storage conditions and is highly variable. Pinenuts should be stored under cool, dry conditions and in a humidity controlled environment. The industry standard for shelf life, when stored under optimum conditions, is 18 months from date of manufacture.
