Compared to white quinoa, organic red quinoa has a richer taste, slightly chewier and heartier texture, and nuttier flavor. Organic red quinoa tends to hold its shape better during cooking so is commonly used in cold salads.
A member of the amaranth family, quinoa is an herbaceous annual plant grown for its edible seeds. It was domesticated by the Andean peoples 3,000 to 4,000 years where it was a staple food. The Incas called quinoa "chisoya mama" meaning mother of all grains.
Cooked quinoa is composed of 72% water, 21% carbohydrates, 4% protein and 2% fat. It is a rich source of the minerals manganese and phosphorous; and a moderate source of dietary fiber, folate, iron, zinc and magnesium.

The product shelf life is dependent on storage conditions. It should be stored under cool, dry conditions and in a humidity-controlled environment. When stored under optimum conditions, the shelf life is 24 months from the date of manufacture.
