Milled from premium hard red winter wheat, Sir Galahad Red Winter Wheat Flour from King Arthur Flour is best described as an all-purpose, low protein bread flour. It is a flour commonly used in bakeries due to its high versatility... strong enough for breads but gentle enough for delicate scones and cakes. It can be used to make artisan breads, laminated dough (alternated layers of butter and dough for making pastry), Neapolitan pizza, cookies, scones and quick breads. The wheat used in this flour is malted which means it is allowed to germinate. This germination helps to break down the complex sugars and starch in the dough to simple sugars making them easier for yeast to feed upon.

Product shelf life is dependent upon storage conditions and is highly variable. Product should be stored under cool, dry, dark conditions in a humidity controlled environment. Industry standard for product shelf life, when stored under optimal conditions, is 6 months from date of manufacture.
