A member of the grass family, sorghum is the 5th most important cereal crop grown in the world. It is cultivated in warm climates worldwide, but is predominately grown in Africa, Central America and South Asia. It is an important food in arid regions as it is drought and heat tolerant making it a staple food for poor and rural families. Its nutritional profile is similar to that of raw oats being high in protein, fiber, B vitamins and minerals such as iron and manganese.
Bob's Red Mill Sweet Sorghum Flour is stone ground from 100% whole grain sorghum. With its light color and texture and mild, sweet flavor, it is a wonderful ingredient for gluten-free baking. It can be substituted or added to any recipe that calls for flour including cookies, cakes, breads and muffins. If using sorghum flour all on its own, it will produce an end product that is more dense since it doesn't contain any gluten but it is known to produce products with a smoother texture than those made with rice flour.

The shelf life of this product is dependent on storage conditions and is highly variable. It should be stored under cool, dry conditions at ≤75°F and ≤50% relative humidity. The industry standard for shelf life, when stored under optimum conditions, is 18 months from the date of manufacture.
