Also known as "confectioners sugar" or "icing sugar", powdered sugar is produced by grinding cane sugar down into a fine, silky powder. There are different levels of fineness when it comes to powdered sugar. The degree of fineness is signified by the number of X's it has after its name. Most common is XXX powdered sugar or XXXX powdered sugar, but you will also find 10X and 12X which is what Wholesome Organic Powdered Sugar is.
Powdered sugar tends to get clumpy over time so a small amount of starch is added to prevent this. With this sugar in particular, tapioca starch is used so that it can remain gluten-free. Many powdered sugars on the market contain cornstarch. When using this powdered sugar to make frosting or icing, you will notice that once liquids are added it will have a faint golden color and a mellow toffee-like flavor. This is from the natural molasses left over from using unrefined and unbleached organic cane sugar. It is produced without the use of herbicides, pesticides or chemicals making it 100% organic.
Also, no bone char or animal products are used to make or de-colorize this sugar so it works wonderfully for vegan baking as well. Use as a one-to-one replacement for refined powdered sugar in any recipe. It is perfect for making frosting, icing, fillings and for dusting baked goods.

Shelf life is indefinite when stored at 40° – 100° F and 40% - 70% relative humidity. Do not stack pallets more than two (2) high to reduce compression caking. Shipping at ambient temperatures and avoiding extreme fluctuations is ideal.
