It creates gas bubbles in dough and batters to provide the characteristic expansion and texture in pancakes, cake, quick breads, and other baked goods. It is also used in breading for fried foods to enhance crispiness and allow passages for steam to escape so that the breading doesn't fall off. In the cosmetic industry, it is used in toothpaste and mouthwash as well as in fizzing bath salts and bath bombs.

The product shelf life is dependent on storage conditions and is highly variable. It should be stored under cool, dry conditions and in a humidity-controlled environment. The industry standard for shelf life, when stored under optimum conditions, is 36 months from the date of manufacture.
