This potato starch is a native potato starch extracted from high quality, high solids Northwest grown potatoes. To extract the starch, potatoes are crushed which releases the starch grains from the destroyed cells. The starch is then washed out and dried into a powder. This particular brand of potato starch is dried without any sort of modification. Being that it is a highly refined starch, it contains very little protein or fat. It is white in color with a neutral flavor. Potato starch is used in food manufacturing as a thickening agent, stabilizer and/or emulsifier. When used as a thickener, it tolerates a higher temperature than cornstarch. It is commonly found as an ingredient in noodles, soups, sauces and gluten-free products. It can also be used in baked goods to add moistness and to provide a smooth texture.

It is recommended to store this product in cool, dry conditions. The shelf life for this product, when stored under optimum conditions, is 24 months from date of manufacture.
