Split peas are the dried, peeled and split seeds of the Pisum sativum plant, otherwise known as the pea. The peas grown for split peas are known as field peas and are specifically grown for drying. The peas start out round with an outer skin when harvested. They are then dried, the skin is removed and they are split in half. There are two different types of split peas, green and yellow. Yellow split peas are slightly less sweet and more starchy than green split peas.
Split peas are low in fat and high in protein and fiber. As a matter of fact, they contain 26 grams of fiber per 100-gram serving. They are used in a wide variety of food applications around the world. In the U.S. they are commonly used to make soup and in India, they are used to make dhal.

The product shelf life of yellow split peas is dependent on storage conditions and is highly variable. They should be stored under cool, dry conditions in a humidity controlled environment. The industry standard for shelf life, when stored under optimum conditions, is 4 months from the date of manufacture.
