Lentil, Lens culinaris, is a bushy annual plant where the seeds grow in pods (usually two seeds per pod). They are part of the legume family known for their lens-shaped seeds. It is these seeds, known as lentils, that are consumed. With origins in the Near East and Central Asia, lentils are the oldest pulse crop known dating all the way back to 11,000 BCE in Greece. Today, the majority of the world production comes from Canada, India, and Australia. They are a staple food throughout India, Sri Lanka, Pakistan, Bangladesh, and Nepal but are widely consumed throughout the world in a variety of dishes.

At a macronutrient level, lentils are composed of 8% water, 63% carbohydrates, 11% dietary fiber, 25% protein, and 1% fat. They are a rich source of the vitamins and minerals folate, thiamin, pantothenic acid, vitamin B6, phosphorous and zinc. Lentils come in a variety of colors including black, orange and green. Black beluga lentils get their name because they resemble beluga caviar. With a distinctive, earthy flavor black beluga lentils are commonly used to make soup, stews, curries, and salads.

Suggested Storage

The product shelf life of Black Beluga Lentils is dependent on storage conditions and is highly variable.  They should be stored under cool, dry conditions in a humidity controlled environment.  The industry standard for shelf life, when stored under optimum conditions, is 24 months from the date of manufacture.
