Bulgur wheat is cracked parboiled groats (a whole grain that retains the endosperm, the germ, and the bran) of several different wheat species, most often from durum wheat. With a light, nutty flavor, it is most commonly used in cereals, breads, salads and dessert puddings.
Originating from Middle Eastern cuisine, it is sometimes confused with cracked wheat which is crushed but not parboiled.
