Western Foods Fine Sweet Rice Flour is milled from high-starch, short-grain glutinous rice, often known as "sticky rice".  It is rich in carbohydrates and low in fat.  With a fine texture and flavor, it is excellent for making gluten-free bread, muffins and cakes.  It also works great for thickening soups, sauces and gravies.   It acts more like a starch in baking, adding moisture to baked goods.  Even though it's not necessarily sweet, despite its name, it is commonly used in desserts.  It is one of the main ingredients for the Japanese dessert mochi.
