Medium desiccated coconut is from the flesh of ripe, mature coconuts that have been grated, dried and sorted for consistent size. Medium coconut is most commonly used in pastry. It's not as fine as macaroon coconut and not as chunky as flaked or fancy coconut. It is easy to measure and is the most friendly form of coconut for baking.
Nutritionally, coconut contains 18 grams of fat (16 grams of which are saturated fat) per 1 ounce serving. It also contains 7 grams of carbohydrates, 5 grams of fiber and 2 grams of protein. Coconut is a significant source of the micro-nutrients manganese, iron, phosphorous, and zinc. Becasue of the higher fat content, coconut is popular in Paleo and Ketogenic diets.

Product shelf life is dependent upon storage conditions and is highly variable. Product should be stored under cool, dry, dark conditions in a humidity controlled environment. Industry standard for product shelf life, when stored under optimal conditions, is 12 months from date of manufacture.
