Also known as black beans, black turtle beans are the small, shiny variety of the common bean, Phaseolus vulgaris. With a mild, earthy and slightly sweet flavor, they have a velvety, dense and meaty texture that holds up well during cooking making them popular in vegetarian dishes. They are especially favored in Latin American cuisine to make soup, chili, burritos and the Brazilian national dish known as feijoada. They are also commonly used in Cajun, Creole and Punjabi cuisine. Nutritionally, they are high in protein and fiber as well as a good source of the minerals magnesium, potassium, phosphorous and folate.
